Starfish here, bringing you a breakdown of how all classes do in jailbreak.
Remember, even though all these statements are partially objective and subjective, it does not mean that they are true all of the time. (Player skill, luck.)
Maybe some of you will find this breakdown helpful and see this as a guide of some sorts.
All classes will be listed per team; Red and Blu. From best to worst.
    Let's get into it.
I will not be including effectiveness in minigames thoroughly because there are too many to list.

    Team Red

    Medic
The Medic is by far the best class to be on team Red, for a lot of reasons. The main thing that makes Medic extremely good is his automatic heal over time when he stays out of battle. You can even increase this effect by equipping the Amputator. This is especially good in Hunger Games, where other classes will not have the ability to heal themselves or go to a nearby medic room. Since friendly fire messes up the hitboxes* for all weapons, it becomes harder to land hits. Medic arguably has the easiest hitbox out of all the classes who can use their melees. Next to that, Medic is the second fastest class in the entire game under normal conditions, being only slower than the Scout. A huge downside for Medic is the fact that most wardens enforce a rule in which Medics are forced to have their Medigun out without healing anyone, rendering a Medic powerless. This, however, is usually not a problem. Healing someone without getting caught is a piece of cake on most maps, meaning you can easily build an übercharge and take care of the warden.

hitbox* Ability to hit other players and successfully connecting a hit, dealing damage.

    + Regenerates health
    + Second fastest class
    + Ability to heal others
    + Easiest friendly fire hitbox

    - Usually bound to Medigun without healing

    Demoman
Demoman.. I should probably say Demoknight. Because Demoman's playstyle on team Red revolves around charging. The reason this playstyle is so effective is due to the critical hit you may receive at a perfectly timed charge. All of Demoman's melee weapons are good to use when charging. The Ullapool Caber, Half-Zatoichi, Claidheamh Mòr and Persian Persuader especially stand out because of their great stats. Having an instantly refreshed charge is usually preferred among most players, hence why the Tide Turner is the most effective shield to use when playing on Red. (The Tide Turner used to be even more effective when it gave 100% charge refresh upon making a kill instead of 75%). In combination with a pair of boots of your choice, you'll be an unstoppable pinball of death. Demoman is also great in Hunger Games due to his great choice of melee weapons and generous healthbar. You'll still have to be careful though, as most wardens tend to forbid charging of any kind. A Blue will most likely take you down the moment you charge due to the insane scream Demoman releases, disabling the element of surprise. Demoman is still an excellent class nevertheless.

    + Ability to charge
+ Doesn't need ammo to be a monster
+ Charging can give you a free crit..

    - ..but it might lead to your death.

    Scout
What makes the Scout so great is the fact that he is the fastest class in TF2. Scout has low health, but makes up with for this with speed and damage output. Equipping the Atomizer makes Scout into a freerunning god. Having a doublejump* in your arsenal greatly improves your chances of survival, it can also help you complete games like obstacle course or deathrun easier. The Sandman is also an exceptionally good weapon as it allows the user to stun from great distances, resulting in an easy kill. The stock Scattergun or Force-A-Nature are able to annihialite most classes on the Blue team in two or three hits. (Other scatterguns may be preferred depending on the person/situation). Rebelling might seem difficult, as most Blues will easily kill a Scout. However, sneaking off unnoticed while following a warden is what the Scout is best at. His jumpiness makes him a harder target, too. Scout is also one of the easiest classes to kill in Hunger Games because of his weak melee attacks. Most other classes on Red can take care of him in one lucky hit.

*doublejump Doublejumping is disabled in jailbreak, Atomizer grants Scout a second jump without taking damage.

    + Fastest class
    + Ability to doublejump
    + Excellent class for rebelling

    - Low health
    - Easy target in Hunger Games

    Pyro
Pyro is a jack of all trades, having nice health and nice speed. Pyro's melee weapon collection is enormous, but the ones that stand out are the Sharpened Volcano Fragment and Backscratcher. But the best weapon for Pyro, which really buffs him up, is the Powerjack. The Powerjack increases Pyro's speed and gives him health back upon a kill, giving him an advantage over other classes. This weapon really shines when having Hunger Games or when rebelling. Once Pyro manages to get ammo, he'll usually be able to kill at least one Blu by spamming flames around him. Because Pyro is immune to lingering fire damage himself, he'll have no real weaknesses.

    + Well-rounded stats
    + No real weaknesses

    - Doesn't have anything that makes him stand out

    Heavy
Heavy is not a force to be reckoned with. Having the highest amount of health in the game makes Heavy a real beast. All of Heavy's melee weapons are good (except for the Eviction Notice) which makes him a very versatile character to use. The best melee weapons for Heavy are the ones that use the "Pootis Pow" taunt. The taunt able to gun down an enemy in one hit from far away. When a warden is busy, this taunt could very well end him. Heavy is very fat though, making him extremely big and slow. Meaning he is easy for Blu's to hit. Heavy will also be the weakest link when it comes to any minigame involving speed.

+ Highest health in the game
    + Has a ranged 1-hit-KO taunt

    - Very low movement speed
    - Very big (easy target)

    Spy
The most annoying class in jailbreak, a good Spy may just end your job as warden. While a Spy is usually forced to have a sapper out the entire round, he most likely will not care. Spies are swift like ninja's, meaning they can easily take out their knife while you look the other way. The Spy can, like Heavy, kill people in one hit with a backstab. This makes him excellent for rebelling. In other games, he has no special qualities. Spy has very low health which makes him an easy target in Hunger Games, much like Scout. (Spy is usually better when the player controlling Spy has experience with backstabs and trickstabs).

    + Backstabs instakill
    - Low health
    - Easy target in Hunger Games

    Soldier
Being almost the slowest class in the game, behind Heavy, Soldier doesn't have much going for him. Most, if not all, of Soldier's melee weapons are.. bad. Most of them are purely optional and you will most likely never use them. The only good one would be the Disciplinary Action. This weapon has a huge melee range in return for less damage. It also makes teammates run faster for 4 seconds, making it very useful weapon for your team too. It means that completing games like Deathrun becomes much easier. Another nice weapon for the Soldier is the Concheror, which gradually gives the Soldier health back over time. Soldier can usually hold his own in fights due to his high health. When a Soldier manages to get ammo, which rarely happens, you might wanna watch out.

+ Really useful class for helping teammates
    - Most melee weapons are bad
    - Is not fit for rebelling

    Engineer
Engineer used to be one of the best classes. But that was before the Gunslinger crit glitch got patched. Since Engineer's usual playstyle revolves around building Sentries, Dispensers and Teleporters it's hard to play as Engineer on team Red. Most of his weapons don't really help him in battle, hence why sticking to the stock Wrench is probably a good idea. Unless you want extra health in favour of crits, in that case the Gunslinger is also a good choice. Engineer really doesn't stand out at all, his stats are all ordinary at best and so are his weapons. The only thing that makes Engineer special is the fact that he can teleport to his spawn location using the Eureka Effect. Too bad this weapon makes the sound of an exploding box of fireworks, resulting in the whole Blue team chasing you down right away.

    + Teleporting is (rarely) useful
    - Is useless without his buildings.
    - His weapons are usually revolved around buildings
    - Low health

    Sniper
Take a Sniper, take away his Sniper Rifle. What you get is the worst class to play on team Red. Sniper is not made for charging into battle, he is supposed to watch from the back, racking up headshots. However, without primary weapon this becomes very hard. Most of his secondary weapons are disabled too upon spawning, except the ones he wields on his back. Darwin's Dangerback being the only good one. None of Sniper's melee weapons help him do better in any way, unless you have ammo of course. Meaning that you are better off sticking to your stock Kukri. If you manage to get ammo, then it doesn't mean an automatic win, as your low health will most likely get you killed in a few good shots.

    - Is useless without his Sniper Rifle
    - Low health
    - Awful melee weapons

    And there's my list.
I hope it was worth the read and feel free to contact me or post below if you (dis)agree.
    Thanks for reading!

You could add the Southern Hospitality to the engineer part. It's really useful in rebelling & hunger games.

EDIT: The Tribalman's Shiv is a good melee wep for the sniper.
EDIT #2 : You could also add how useful the classes are for wardays if you want to. Not sure if it counts as a minigame since it's a whole day.

    Anyway, nice guide! nub

I'm just sorry, for me this guide doesn't help for me, it's like everything's backwards.

P.s you called the sniper melee bad. That's why I used to kill medics on Jailbreak with it c:
Also if your not silly and you time it right you can take out the whole team with pyro, usually I tend to wait until they are all in 1 spot close to reds so that even if I die they can finish the job or if I survive but not all of them are killed, I can take cover in the group.
    Etc etc

Some of the jailbreak maps doesn't allow certain weapons for reds, some of the weapons that is locked are of course minigun, sniper rifle and flare gun

Sniper is the only class where on certain maps you get a 1/0 bow.... That is great!

Maybe I was a little hard on Sniper..
Don't worry though, his rating on team Blue will be much more positive.

Edit:pyro also has the Back Scrather that gives him some additional damage

Sniper is one of the best classes to be as a red, they can simply pull out the huntsman glitch and do a quick 360 damage headshot insta-killing any warden in their way.
